Life Changing Overnight Oats

A few months ago I decided my eating habits needed a change.  Over the last few years I had struggled with "stomach pain" that turned out to be a serious gall stone issue.  When my baby boy was just 5 weeks old I had to have my gall bladder removed after a serious attack that landed me in the ER.  

Through the process I realized my diet was less than stellar.  It was high in fat and sugar.  Classic southern girl diet was in full effect!  During the summer I did a great job and even kicked my sweet tea addition, but once the holidays and cooler days rolled around I gave right back into those temptations.  

After the holidays I decided to get it together and start being more intentional about my food choices.   One choice I have made is to eat a more nutritious breakfast each day.  I usually eat breakfast once I get to school so having something that I can bring with me can be a challenge.  

Enter Pinterest... I have a friend at school who eats "over night oats" on the regular.  I love oatmeal and it seemed like a great portable meal that I could eat on the go so I thought I would give it a try.  I simply searched "overnight oats" and chose the first recipe that caught my eye.  

This is the recipe I tried and I LOVED it!  

Of course I did not follow the recipe to a t (I left out the vanilla extract - I was out) and my bananas were a bit underripe (is that even a word) but overall they were super yummy!  I am a believer and look forward to trying new recipes and flavors!

Mid-Month Confessions

It has been a while since I have logged into this little space of mine on the internet.  I decided to get back into the groove of writing and thought I might try my hand at my own "Mid-Month Confessions."  I really enjoyed reading these from Teaching Sam and Scout!

1. Aside from the occasional hunting trip (who am I kidding, I haven't been in TWO years), I have zero hobbies.  The other week my husband and I were discussing hobbies (he has tons) and it was embarrassing to have to ask, "Does being a mommy count as a hobby?"  I decided that I sounded ridiculously sad and took it upon myself to finally try my hand at a new hobby, photography.  I even signed up for a class!   Perhaps I can now actually learn how to use my DSLR for more than a fancy point and shoot camera that stays on auto at all times! 

2.  I may have "forgotten" to put dinner in the crockpot (more than once) this week so that we could order out instead.  I enjoy cooking when I can be home all day, but after school I want to get home and just enjoy PLAY time! 

3. As the mother of an 8 month old, I have gotten use to not getting much sleep.  Which is a good thing, because my he still wakes up during the night.  That's okay though, I actually look forward to this time so that I can watch Netflix in peace.  My current obsession is Mad Men.  I have a serious love/hate relationship with Don Draper and the idea of my son sleeping through the night. 

4. Judging from the VERY poor job I did above, I cannot add the hyperlink that I was suppose to use to link into this post.  I am learning I am not as tech savvy as I had once believed (and hoped) and have a LOT to learn about "the Google."  

I know there are more but my sleep deprived brain is going to stop before I embarrass myself!  This is fun!  I hope I can get back into the routine and try my hand at these confessions on a more regular basis!
